Five Ingredients Our Kitchen Never Runs Without

Every kitchen has its non-negotiables, the handful of ingredients that show up in dish after dish because, quite simply, nothing else does the job as well. Here are five that never leave our pantry.

Good olive oil. Not just any bottle, but one with real character. It finishes a plate the way a good sentence needs a strong last word.

Flaky sea salt. We season in layers throughout cooking, but a light finishing touch of flaky salt at the very end is what makes flavors pop on the plate rather than just in the pot.

Fresh herbs, always. Dried herbs have their place, but the brightness of fresh thyme, basil, or parsley added at the right moment is something no shortcut replicates.

A well-made stock. This is the quiet backbone of half our menu. Sauces, risottos, braises: none of them taste right without a stock that’s been given the time it deserves.

Citrus. A little lemon or orange zest at the end of cooking wakes up a dish the way morning light wakes up a room. It’s a small move with an outsized effect.

None of these are exotic or hard to find, which is exactly the point. Great cooking is less about rare ingredients and more about knowing how to use the ones already in front of you, with care and a bit of patience.
